Our Favorite Weekend Breakfast

Let me start by saying that this is not a groundbreaking recipe (and most likely you already make these), but if you don’t, I wanted to share my kids’ absolute favorite weekend breakfast. But brace yourself – it’s not healthy and it involves powdered sugar. Lots of it. YOLO!

I hate when food bloggers tell long stories when they are sharing a recipe (just get to the point!), but I do want to share a quick story about these. When my husband was a boy and would go to sleepovers at his buddy’s house, his dad would always make this breakfast. My husband LOVED this breakfast and having never had anything like it at his own house, he was just blown away by this meal. As an adult, he reached out to his friend’s dad to get the recipe because he had such fond memories of eating this special breakfast. We started making it for our boys and it is truly their most requested breakfast. I know that one day we’ll be making it for them and their friends when they have sleepovers!

We call these “French Pancakes”, but you’ll see they are pretty much just crepes (maybe just a little thicker). The recipe uses easy ingredients that you probably already have in your kitchen. We make these on our griddle, so each one is huge (just cut them up into the portions you need). I highly suggest making a big batch and reheating them for a couple of breakfasts! I have a 5 and 3-year-old and they can crush at least one batch of these in one sitting.

Okay, here’s the recipe:

Mix in Order:

  1. 3 eggs
  2. 1 ½ tablespoons of white sugar
  3. 1 ½ cups of milk
  4. 2 dashes of salt
  5. 1 cup of flour

Mix with a hand mixer (or blender) until there are no lumps. Using a small measuring cup, pour batter onto buttered griddle (or pan). Flip periodically to make sure both sides are cooked.

When the pancake is done, lather it up with butter and sprinkle on powdered sugar. My boys eat theirs cut up, but I like to roll mine up and eat it that way. Repeat the process until all the batter is gone! Easy peasy, and so dang yummy. Of course, you could spread butter and jam, or Nutella on yours, but we love ours with butter and powdered sugar.
